Fall Thyme Hash

This fall vegetable and apple hash is the perfect side dish along side your favorite lean protein. Looking to bulk this side dish up to a main meal? Add a couple chicken breasts or links of smoked sausage.

  • 1 1/2 tbsp - Olive oil
  • 1 ct - Sweet potato, medium
  • 3-4 ct - Red potatoes
  • 12 ct - Brussel sprouts
  • 1/2 ct - Onion, large
  • 2 ct - Apples, medium
  • 2 tsp - Thyme
  • 1 tsp - Salt
  • 1/2 tsp - Black pepper

  1. Dice potatoes, onion, and apple. Chop brussel sprouts in quarters.
  2. Add potatoes, onion, and brussel sprouts to a frying pan heated with olive oil. Cook vegetables covered, stirring occasionally, until potatoes are fork tender. (About 10 minutes)
  3. Add apple, thyme, salt, and pepper. Cook another 5-10 minutes. Serve and enjoy!
